I was so excited to make this dish! I went to a Thai restaurant a few years ago in Atlanta and they served us food in a pineapple. Since then, I’ve been wanting this treat again! So, I decided to make it.
I got the recipe from skinnytaste.com but, I amended a few things. Here is what I used:
- 1 1/2 cups (uncooked) brown rice
- 1 tsp oil
- 1.25 lb shrimp, shelled and deveined
- 1 1/2 cups fresh pineapple, cut into small chunks
- Large scallions, chopped
- 3 cloves garlic, minced
- 1 tsp Creole Seasoning
- Coated shrimp in Ole Bay lightly
- 2 tsp soy sauce (or more to taste)
- Green Pepper
I cooked the rice first. Then, placed the shrimp in a pan with olive oil. I seasoned shrimp with Ole Bay and Creole Seasoning, added a few scallions, garlic cloves and green pepper. For the pineapple: I cut it in half, cut out the inside to make a bowl. Also, cut off a small piece on the bottom so that the pineapple will have a flat base.
I used the remaining pineapple to put in the fried rice. It was delicious and pretty easy! My guests loved it!
